Ingredients

  • 8 buttermilk biscuits

  • 2 tbsp butter

  • 1/4 cup flour

  • 3 cups whole milk

  • salt and pepper to taste

  • Breakfast Sausage
  • 1 lb ground pork (80/20)

  • 1 tsp kosher salt

  • 1/2 tsp dried thyme

  • 1/2 tsp black pepper

  • 1/2 tsp rubbed sage

Directions

  • In a large bowl, mix the ingredients for the breakfast sausage and let it sit out at room temperature for 10 minutes.
  • Heat a pan over medium-high heat and add the prepared breakfast sausage. Cook for about 5-7 minutes.
  • Next, add the butter and let it melt. Then sprinkle in the flour and mix well.
  • Slowly stir in the milk, and bring everything to a simmer. Season with salt and pepper.
  • Continue cooking over medium-low heat until thickened.
  • Taste and adjust the season as needed.
  • Ladle the gravy over the buttermilk biscuits and serve immediately.
