2 tbsp butter
1/4 cup flour
3 cups whole milk
salt and pepper to taste
- Breakfast Sausage
1 lb ground pork (80/20)
1 tsp kosher salt
1/2 tsp dried thyme
1/2 tsp black pepper
1/2 tsp rubbed sage
Directions
- In a large bowl, mix the ingredients for the breakfast sausage and let it sit out at room temperature for 10 minutes.
- Heat a pan over medium-high heat and add the prepared breakfast sausage. Cook for about 5-7 minutes.
- Next, add the butter and let it melt. Then sprinkle in the flour and mix well.
- Slowly stir in the milk, and bring everything to a simmer. Season with salt and pepper.
- Continue cooking over medium-low heat until thickened.
- Taste and adjust the season as needed.
- Ladle the gravy over the buttermilk biscuits and serve immediately.
