Ingredients

  • 24 oz smoked sausage, sliced

  • neutral oil

  • 2 lb russet potatoes, cubed

  • 4 cups kale, roughly chopped

  • 4 tbsp butter

  • 1/2 cup milk

  • 2 tsp Kosher salt

  • 1/2 tsp black pepper

  • coarse-ground mustard, to serve

Directions

  • Fill a pot with water and bring to a boil. Add the potatoes and kale and cook until the potatoes are fork-tender.
  • In the meantime, heat a bit of oil in a pan over medium-high heat. Add the sliced sausages and sear until browned on both sides, then set aside.
  • Once the potatoes are fork-tender, strain them along with the kale into a large bowl. Smash everything with a fork.
  • Add the butter and mix well. Then add the milk, salt, and pepper and mix again until everything is well incorporated.
  • Arrange the sliced sausage along the potato and kale mash. Serve with coarse-ground mustard.
