Ingredients

  • 4, skin-on bone-in turkey drumsticks, about 1 lb each

  • 2 tbsp Kosher salt

  • Sage Butter
  • 1 stick of butter, room temperature

  • 2 tsp fresh sage, chopped

  • 1 tsp fresh rosemary, chopped

  • 1 tsp fresh thyme, chopped

  • 2 garlic cloves, grated

  • 1 tsp Kosher salt

  • 1/2 tsp black pepper

Directions

  • Sprinkle the turkey legs evenly with 2 Tbsp of salt. Let them rest at room temperature for at least 1 hour.
  • Meanwhile, mix the ingredients for the sage butter and set aside.
  • Set the oven to 325°F.
  • Generously coat each turkey leg with the sage butter. Gently loosen the skin and spread some butter underneath for extra flavor and moisture.
  • Arrange the turkey legs on a wire rack set over a baking sheet. Cover tightly with foil and roast for 1 hour.
  • Remove the foil and increase the oven temperature to 375°F. Continue roasting for 30 minutes.
  • Let rest for a few minutes, then serve with your choice of sides.
