Ingredients

  • 1 lb elbow macaroni

  • 1/2 cup green bell pepper, finely diced

  • 1/2 cup celery, finely diced

  • 1/2 cup red onion, finely diced

  • 1/4 cup shredded carrots

  • Dressing
  • 1 1/2 cups mayo

  • 2 Tbsp white vinegar

  • 1 Tbsp yellow mustard

  • 1 Tbsp white sugar

  • 1 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp garlic powder

Directions

  • Boil the elbow macaroni until al dente. Strain and let cool to room temperature, while you prep the rest of the ingredients
  • Combine the dressing ingredients in a small bowl and set aside.
  • In a large bowl, add the macaroni and vegetables. Pour over half of the dressing and gently mix.
  • Cover and refrigerate for at least 2 hours, then right before serving, pour in the rest of the dressing and mix one final time.
