Macaroni Salad

1 lb elbow macaroni
1/2 cup green bell pepper, finely diced
1/2 cup celery, finely diced
1/2 cup red onion, finely diced
1/4 cup shredded carrots
- Dressing
1 1/2 cups mayo
2 Tbsp white vinegar
1 Tbsp yellow mustard
1 Tbsp white sugar
1 1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
Directions
- Boil the elbow macaroni until al dente. Strain and let cool to room temperature, while you prep the rest of the ingredients
- Combine the dressing ingredients in a small bowl and set aside.
- In a large bowl, add the macaroni and vegetables. Pour over half of the dressing and gently mix.
- Cover and refrigerate for at least 2 hours, then right before serving, pour in the rest of the dressing and mix one final time.
