

Spatchcock Chicken with Garlic Herb Butter

5-6 lb whole chicken, spatchcocked
Kosher salt
- Garlic Herb Butter
8 tbsp room temperature butter
4 garlic cloves, minced
2 Tbsp mixed herbs of choice (oregano, thyme, rosemary sage; etc)
1/2 tsp Kosher salt
Directions
- Preheat your oven to 400° F.
- Place the chicken on a baking tray with a wire rack. Generously salt the chicken and let it sit at room temperature for 30 minutes.
- In a bowl, mix together all the garlic herb butter ingredients until well combined.
- After the chicken has rested, gently lift the skin and spoon the garlic herb butter underneath.
- Bake for about 1 hour, or until the internal temperature reaches 165°F at the thickest part of the chicken.
- Let rest for 5 minutes, then serve.
