Ingredients

  • 5-6 lb whole chicken, spatchcocked

  • Kosher salt

  • Garlic Herb Butter
  • 8 tbsp room temperature butter

  • 4 garlic cloves, minced

  • 2 Tbsp mixed herbs of choice (oregano, thyme, rosemary sage; etc)

  • 1/2 tsp Kosher salt

Directions

  • Preheat your oven to 400° F.
  • Place the chicken on a baking tray with a wire rack. Generously salt the chicken and let it sit at room temperature for 30 minutes.
  • In a bowl, mix together all the garlic herb butter ingredients until well combined.
  • After the chicken has rested, gently lift the skin and spoon the garlic herb butter underneath.
  • Bake for about 1 hour, or until the internal temperature reaches 165°F at the thickest part of the chicken.
  • Let rest for 5 minutes, then serve.
