One Pan Pasta with tomatoes and spinach

1 lb spaghetti
1 lb cherry tomatoes
8 cloves garlic, minced
4 cups raw spinach
1/2 cup parmesan, freshly grated
Salt and pepper, to taste
Directions
- In a kettle or pot, bring 4 cups of water to a boil. Meanwhile, combine tomatoes, garlic, and a pinch of salt in a large skillet, then place the spaghetti on top.
- Place the pan over high heat and pour the hot water over the pasta. Bring everything to a boil, then reduce the heat to medium. Cover and cook for about 8 minutes, or until the pasta is just shy of al dente.
- Next, uncover and add the spinach and parmesan. Stir well and cook until the pasta is al dente, about 4 minutes. Taste and adjust seasoning with salt and pepper as needed.
- Garnish with more freshly grated parmesan, and enjoy.
