Ingredients

  • 1 lb spaghetti

  • 1 lb cherry tomatoes

  • 8 cloves garlic, minced

  • 4 cups raw spinach

  • 1/2 cup parmesan, freshly grated

  • Salt and pepper, to taste

Directions

  • In a kettle or pot, bring 4 cups of water to a boil. Meanwhile, combine tomatoes, garlic, and a pinch of salt in a large skillet, then place the spaghetti on top.
  • Place the pan over high heat and pour the hot water over the pasta. Bring everything to a boil, then reduce the heat to medium. Cover and cook for about 8 minutes, or until the pasta is just shy of al dente.
  • Next, uncover and add the spinach and parmesan. Stir well and cook until the pasta is al dente, about 4 minutes. Taste and adjust seasoning with salt and pepper as needed.
  • Garnish with more freshly grated parmesan, and enjoy.
