Ingredients

  • 4 bone-in pork chops

  • 2 1/2 tsp Kosher salt

  • 1/4 cup oil

  • 1 white onion, sliced into half moons

  • 2 tbsp butter

  • 2 tbsp flour

  • 2 cups chicken broth

  • 1/2 tsp dried thyme

  • Flour mixture
  • 1/2 cup flour

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 1 tsp pepper

Directions

  • Pat the pork chops dry, then sprinkle with 2 tsp of salt.
  • Mix the ingredients for the flour mixture and set aside.
  • In a large skillet, heat 1/4 cup of oil over medium-high heat.
  • While the oil is heating, dip the pork chops into the flour mixture, making sure to coat them on all sides.
  • Add the pork chops to the skillet, and cook them until browned, about 4-5 minutes per side.
  • Remove the pork chops, then lower the heat to medium. Add in the white onions and cook for 15-20 minutes, until softened and slightly caramelized.
  • Add in the butter and let it melt. Sprinkle in the flour and mix immediately. Slowly stir in chicken broth, then season with salt (1/2 tsp) and thyme.
  • Bring everything to a simmer. Then lower the heat to medium-low. Add back in pork chops and continue simmering for 20-25 minutes.
  • Serve with your choice of sides.
