Smothered Pork Chops

4 bone-in pork chops
2 1/2 tsp Kosher salt
1/4 cup oil
1 white onion, sliced into half moons
2 tbsp butter
2 tbsp flour
2 cups chicken broth
1/2 tsp dried thyme
- Flour mixture
1/2 cup flour
1 tsp garlic powder
1 tsp smoked paprika
1 tsp pepper
Directions
- Pat the pork chops dry, then sprinkle with 2 tsp of salt.
- Mix the ingredients for the flour mixture and set aside.
- In a large skillet, heat 1/4 cup of oil over medium-high heat.
- While the oil is heating, dip the pork chops into the flour mixture, making sure to coat them on all sides.
- Add the pork chops to the skillet, and cook them until browned, about 4-5 minutes per side.
- Remove the pork chops, then lower the heat to medium. Add in the white onions and cook for 15-20 minutes, until softened and slightly caramelized.
- Add in the butter and let it melt. Sprinkle in the flour and mix immediately. Slowly stir in chicken broth, then season with salt (1/2 tsp) and thyme.
- Bring everything to a simmer. Then lower the heat to medium-low. Add back in pork chops and continue simmering for 20-25 minutes.
- Serve with your choice of sides.
