Cod Fish Tostadas with Mango Salsa

2 lbs. cod fish, bones removed and patted dry
8 tortilla shells
cooking spray
neutral oil
- Seasoning mix
2 tsp kosher salt
2 tsp chili powder
2 tsp cumin
1 tsp garlic powder
1 tsp onion powder
- Guacamole
4 avocados, skinned and pits removed
1 lime, juiced
1 tsp salt, or to taste
1/4 cup cilantro, finely chopped
- Mango Salsa
2 mangoes, diced
1/2 cup red onion, diced
1/4 cup cilantro, finely chopped
1 lime, juiced
1 serrano pepper, diced
1/2 tsp salt
Directions
- Pre-heat the oven to 400° F.
- In a small bowl, combine all the ingredients for the seasoning mix. Once combined, rub the seasoning mix into the cod fish and let it sit for 15 minutes.
- Lightly spray the tortillas with cooking spray, then sprinkle with a bit of salt. Bake for 5-6 minutes, on each side, until lightly browned and crisp.
- Meanwhile, make the guacamole by adding the avocados, lime juice, and salt to a bowl. Mash with a fork until mostly smooth. Finally, add the cilantro, and mix everything. Store in the fridge until you are ready to use.
- To make the mango salsa, combine all the ingredients listed and mix well.
- Heat 2-3 tbsp of oil in a skillet placed over medium-high heat. Add the cod fish and cook for about 3-4 minutes on each side.
- Assemble the tostadas– first the guacamole, then the cod fish, and finally top with the mango salsa. Serve with extra lime wedges, and enjoy.
