4 chicken breasts, about 3/4-1 lb each
salt and pepper
1/2 cup flour
2 eggs
1/2 cup water
1 cup breadcrumbs
oil, for frying
Directions
- Butterfly and pound the chicken breasts to 1/3” thickness. Season generously with salt and pepper.
- Set up a dredging station with three shallow containers: whisk together the eggs and water in one, place the flour in another, and add the breadcrumbs to the third.
- Pour oil to about 1/2” thickness in a large skillet and heat over medium-high heat.
- While the oil is heating, coat each breast with the flour, dusting off any excess. Next, dip them into the egg mixture, then pack each breast with the breadcrumbs, pressing down firmly so the breadcrumbs will stick.
- Shallow fry the chicken for about 3 minutes per side, or until golden brown and cooked through.
- Transfer to a wire rack to drain excess oil, then serve.
