Ingredients

  • 12 chicken wings (about 3 lbs)

  • Jerk Marinade
  • 4 scallions, whites and greens

  • 4 garlic cloves

  • 2 scotch bonnet peppers (habanero)

  • 1-inch piece of ginger

  • 4 thyme sprigs

  • 1/2 medium yellow onion

  • 2 Tbsp soy sauce

  • 2 Tbsp distilled white vinegar

  • 2 Tbsp oil

  • 1 Tbsp brown sugar

  • 1 1/2 Tbsp salt

  • 1 Tbsp allspice

  • 1 tsp black pepper

  • 1/4 tsp cinnamon

  • pinch of nutmeg

Directions

  • Place the chicken wings in a large bowl.
  • In a food processor, combine all of the ingredients for the jerk marinade and pulse until smooth.
  • Set aside 1/3 cup of the marinade to use for basting later. Pour the remaining marinade over the chicken wings and mix until evenly coated. Cover and refrigerate overnight.
  • Preheat the oven to 400°F. Arrange the chicken on a wire rack set over a baking tray and bake for 50 minutes. After 25 minutes, remove the wings from the oven. Baste with the reserved marinade, flip the wings, and baste the other side. Return to the oven and continue baking until the wings are deeply browned and cooked through.
  • Serve hot with your choice of sides.
