Sourdough French Toast

Sourdough loaf, sliced into 8, 1 1/2- 2-inch thick pieces
4 tbsp unsalted butter
Sliced strawberries, to serve
Maple syrup, to serve
Powdered sugar, to serve
- Custard
1 cup heavy cream
2 eggs
1 tsp ground cinnamon
1 tsp vanilla extract
- Chantilly cream cheese
4oz cream cheese, room temperature
1 tsp vanilla extract
1 cup heavy cream
1/2 cup powdered sugar
Directions
- To make the Chantilly cream cheese, use a hand mixer to whip the cream cheese until smooth. Add the vanilla extract, then slowly pour in the heavy cream while continuing to whip. Once combined, sift in the powdered sugar and continue whipping until firm peaks form. Refrigerate until ready to use.
- In a separate bowl, mix the ingredients for the custard and set aside.
- Heat a large non-stick pan over medium heat and add 1 tbsp of butter. Dip the sliced sourdough into the custard and immediately place it in the hot pan. Cook each slice for 2-3 minutes per side, or until golden brown. Repeat with the remaining sourdough, adding more butter to the pan as needed.
- To serve, top with the sliced strawberries, maple syrup, powdered sugar, and chantilly cream cheese.
