German Potato Salad

2 lb red potatoes, scrubbed and cut into 1” cubes
2 tbsp kosher salt
1/2 lb bacon, diced
1 small yellow onion, diced
2 tbsp fresh parsley, chopped
1 tbsp fresh chives, chopped
- Dressing
1/3 cup white vinegar
2 Tbsp white sugar
1 Tbsp dijon mustard
1 tsp black pepper
Directions
- Add the potatoes and salt to a large pot. Cover the potatoes with water by at least 1 inch. Bring to a boil, then reduce to a simmer and cook for about 10-12 minutes.
- Meanwhile, add the bacon to a skillet over medium-high heat and cook until crisp.
- Remove the bacon, leaving the grease in the skillet. Add the onions and cook until softened, about 6–8 minutes.
- In a large bowl, mix the ingredients for the dressing. Add the cooked potatoes, bacon, onions, parsley, and chives to the bowl and toss well to combine. Serve warm.
