2 cups short-grain rice (sushi rice)
2 1/4 cups water
2 tbsp of soy sauce
2 tbsp of sugar
1 tbsp of mirin
1/2 tsp sesame oil
1/2, 12-oz can of Spam, diced
2 scallions, sliced
1-2 nori sheets, for wrapping
Directions
- Add 2 cups of rice and 2 1/4 cups of water to a rice cooker and cook according to the manufacturer’s instructions. Once done, transfer the rice to a separate container and let it cool slightly until it’s comfortable to handle.
- Meanwhile, prepare the sauce for the spam by mixing the soy sauce, sugar, mirin, and sesame oil in a small bowl. Set aside.
- In a skillet placed over medium-high heat, add the diced Spam and cook until browned, about 5-7 minutes.
- Pour in the sauce, then reduce the heat to medium-low. Cook for 4–5 minutes, stirring occasionally, until the sauce thickens and coats the Spam.
- Stir in the scallions, then remove from the heat and transfer the mixture to a bowl.
- To make the onigiri, line a small bowl with a sheet of plastic wrap. Add a generous portion of rice and gently press it to create a small indentation in the center. Add 1–2 tablespoons of the Spam filling, then cover with more rice. Use the plastic wrap to tightly enclose and shape the onigiri into a triangle. Repeat until all the rice and filling are used.
- Cut the nori sheets into long strips and wrap them around each onigiri. Serve and enjoy!
