1 tbsp neutral oil
1/2 medium yellow onion, diced
6 garlic cloves, minced
1 1/2 tsp salt
1 tsp ground turmeric
1/2 tsp ground cardamom
1/2 tsp cumin
2 cups basmati rice
3 cups water
1 bay leaf
freshly chopped parsley, for garnish
Directions
- Add 1 tbsp of oil to a pot over medium heat.
- Add in the diced onions and cook for 2-3 minutes. Add the garlic and cook until fragrant.
- Sprinkle in the salt, turmeric, cardamom, and cumin. Stir well, then add the rice and mix until the grains are evenly coated. Continue to stir, allowing the rice to get slightly toasty.
- Add the water and bay leaf, then bring everything to a gentle boil. Once boiling, cover and reduce to a simmer. Cook for 15 minutes.
- Remove the pot from the heat and let it sit, covered, for 5 minutes.
- Uncover and fluff the rice with a fork.
- Garnish with fresh parsley, then serve.
