Besos de Nuez (Mexican Wedding Cookies)

1 1/4 cup unsalted butter, softened
1/2 cup powdered, plus more for dusting later
1 tsp vanilla extract
2 cups flour
1/8 tsp salt
1 tsp cinnamon
1 cup chopped pecans
Directions
- Preheat the oven to 350° F.
- In a mixing bowl, combine the unsalted butter, powdered sugar, and vanilla. Mix until smooth and well blended.
- Add the flour, salt, and cinnamon, mixing until incorporated. Fold in the pecans and continue mixing until a dough forms.
- Line a baking sheet with parchment paper. Using your hands, shape the dough into golf ball–sized balls (about 20 total) and place them evenly on the prepared baking sheet.
- Remove from the oven and let cool for about 2-3 minutes.
- Roll the cookies in the powdered sugar, then place them on a separate plate.
- Once the cookies have cooled completely, roll them again in the powdered sugar before serving.
