Buffalo Wings with Ranch

4 lb. chicken wings (wingettes and drumsticks)
1 tbsp kosher salt
1/2 tbsp garlic powder
1/2 tbsp onion powder
1 tsp paprika
1/4 cup cornstarch
- buffalo sauce
3/4 cup hot sauce
6 tbsp unsalted butter
1 tbsp brown sugar
1/2 tsp Worcestershire sauce
- ranch
1 cup mayonnaise
1/2 cup sour cream
1/2 cup buttermilk
1 tsp garlic powder
1 tsp onion powder
1 tbsp fresh chives
1 tbsp fresh dill
1 tbsp fresh parsley
1 1/2 tsp lemon juice
1/2 tsp sugar

Directions
- Pat the chicken dry with a paper towel to remove excess moisture. Season with kosher salt, garlic powder, onion powder, and paprika. Lastly, add 1/4 cup of cornstarch and coat well. Let wings rest on a wire rack for 30 minutes.
- Meanwhile, make the ranch by combining all of the ingredients listed and mixing well. Store in the fridge until you are ready to use.
- Heat a pot of oil to 350 degrees and fry your wings for 6 minutes. Be sure not to overcrowd the pot. Remove, then increase the temperature to 375 degrees and fry for another 4-6 minutes.
- To make the buffalo sauce, add hot sauce, brown sugar, and Worcestershire sauce to a small pot and place over low heat. After a few minutes, slowly add in the butter and whisk well. Let simmer until slightly thickened, making sure to stir occasionally.
- Once the buffalo sauce is done, pour over the wings and toss, making sure every wing is well coated.
- Serve with the ranch and the veggies of your choice.
