
Zucchini Fritters

3 cups grated zucchini (about 3 medium zucchinis)
1 tbsp chopped dill
4 scallions, thinly sliced
1 cup crumbled feta
1 1/2 tsp kosher salt
1/2 tsp black pepper
2 large eggs
3/4 cup all-purpose flour
olive oil, shallow-frying
- Tzatziki
1 cup Greek yogurt
2 garlic cloves, grated
1/2 cup grated cucumber
1 tbsp lemon juice
1/2 tbsp olive oil
1 tbsp chopped dill
1/2 tsp salt
Directions
- Spread out the grated zucchini on a baking tray lined with paper towels. Sprinkle with 1 tsp of salt and let sit for 30 minutes. Meanwhile, in a small bowl, mix the ingredients for the tzatziki and refrigerate until ready to serve.
- Squeeze out the excess moisture from the zucchini, then add it to a large bowl along with the dill, scallions, feta, and 1/2 tsp each of salt and pepper. Mix well, then add in the eggs and slowly incorporate the flour. Mix everything until well combined.
- Heat olive oil in a skillet over medium/medium-high heat.
- Add a heaping spoonful of filling and fry until golden brown on both sides.
- Serve with tzatziki.
