Ingredients

  • 1 tbsp butter

  • 4 eggs, whisked

  • salt and pepper, to taste

  • optional garnish: fresh chives

Directions

  • In a pan on medium/medium-low heat, melt 1 tbsp butter.
  • Meanwhile, vigorously whisk the eggs in a small bowl.
  • Once the butter has melted, add the whisked eggs to the pan.
  • Immediately fold and stir the eggs around the pan. When the eggs are almost done, season with salt and pepper and continue cooking until the eggs are set.
  • Remove the eggs from the pan. Garnish with fresh chives, then serve.
