1 tbsp butter
4 eggs, whisked
salt and pepper, to taste
optional garnish: fresh chives
Directions
- In a pan on medium/medium-low heat, melt 1 tbsp butter.
- Meanwhile, vigorously whisk the eggs in a small bowl.
- Once the butter has melted, add the whisked eggs to the pan.
- Immediately fold and stir the eggs around the pan. When the eggs are almost done, season with salt and pepper and continue cooking until the eggs are set.
- Remove the eggs from the pan. Garnish with fresh chives, then serve.
