1 lb. tomatillos
1/2 white onion
6 garlic cloves, crushed
2 serrano chiles
1 cup of cilantro, stems okay
1 tsp kosher salt
Directions
- Peel and rinse tomatillos
- Place the tomatillos, onion, garlic, and serrano chiles in a medium-sized pot and fill with water. Bring the water to a boil, then cover and reduce to a simmer. Let simmer for about 5 minutes, or until the colors of the tomatillos have changed.
- Gently remove everything from the pot and place in a blender. Add in the cilantro and salt and blend everything until smooth. Taste and adjust to your liking.
- Store in the fridge until cooled, then serve.
