Ingredients

  • 2 1/2 lb russet potatoes, peeled

  • 8 oz gruyere, freshly grated

  • 1/4 cup parmesan, freshly grated

  • Cream
  • 1 1/2 cups heavy cream

  • 2 sprigs of Rosemary

  • 4 garlic cloves, crushed

  • 1/4 cup parmesan, freshly grated

  • 1/2 tbsp salt

  • pinch of black pepper

  • 2 tbsp butter

Directions

  • Preheat the oven to 375 degrees.
  • Thinly slice potatoes and soak in cold water while you prepare the cream.
  • Add the ingredients for the cream into a small pot and place over medium heat. Let cook until the butter has melted, do not let the mixture boil.
  • Layer the potatoes in a 9x13-inch baking dish and pour the infused cream over the top, make sure to remove the garlic and rosemary.
  • Cover and bake for 40 minutes.
  • After 40 minutes, uncover and add the grated Gruyere and parmesan over the top. Place back in the oven and bake uncovered for another 30 minutes.
  • Let sit for 10 minutes before serving.
