Potatoes Au Gratin

2 1/2 lb russet potatoes, peeled
8 oz gruyere, freshly grated
1/4 cup parmesan, freshly grated
- Cream
1 1/2 cups heavy cream
2 sprigs of Rosemary
4 garlic cloves, crushed
1/4 cup parmesan, freshly grated
1/2 tbsp salt
pinch of black pepper
2 tbsp butter
Directions
- Preheat the oven to 375 degrees.
- Thinly slice potatoes and soak in cold water while you prepare the cream.
- Add the ingredients for the cream into a small pot and place over medium heat. Let cook until the butter has melted, do not let the mixture boil.
- Layer the potatoes in a 9x13-inch baking dish and pour the infused cream over the top, make sure to remove the garlic and rosemary.
- Cover and bake for 40 minutes.
- After 40 minutes, uncover and add the grated Gruyere and parmesan over the top. Place back in the oven and bake uncovered for another 30 minutes.
- Let sit for 10 minutes before serving.
