
Pasta alla Vodka

1 lb lumache pasta
2 Tbsp olive oil
2 Tbsp butter
1 medium yellow onion, peeled and diced
2 garlic cloves, peeled and minced
1/2 tsp crushed red pepper flakes
1 tsp kosher salt, or to taste
6 ounces tomato paste
1/2 cup vodka
1 1/4 cup heavy cream
1/4 cup finely grated Parmesan, plus more as garnish
basil, for garnish
Directions
- Fill a large pot with water and bring it to a boil. Cook the pasta until al dente, following the package instructions, and reserve 1/4 cup of pasta water before draining.
- While the pasta is cooking, add olive oil and butter to a pan over medium heat.
- Once the butter has melted, add the diced onions and sweat for 5-7 minutes. Next, add the garlic and cook until fragrant. Season with crushed red pepper flakes and salt
- Stir in the tomato paste and cook for 2 minutes. Add the vodka, allowing it to simmer for 2–3 minutes until a bit of the alcohol has cooked off. Pour in the heavy cream, stirring to combine.
- Add 1/4 cup of reserved pasta water and stir. Add in the cooked pasta and parmesan and stir until everything is well combined and the sauce has emulsified.
- Garnish with fresh basil and serve immediately.
