Ingredients

  • 2 lb. russet potatoes, peeled and cubed

  • 4 tbsp neutral oil, divided

  • 1/2 yellow onion, diced

  • 1/2 red bell pepper, diced

  • 1/2 green bell pepper, diced

  • 1 1/2 tsp kosher salt

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1/2 tsp black pepper

Directions

  • Bring a pot of water to a boil and cook potatoes until fork tender, about 6-7 minutes.
  • After boiling, let the potatoes rest while you sauté the onions and bell peppers.
  • Heat 2 tbsp of oil in a pan on medium-high heat.
  • Add the onions and bell peppers and sauté for 6-8 minutes. Set aside in a separate container.
  • Clean the pan, then add another 2 tbsp of oil and sauté the potatoes for about 10 minutes, flipping occasionally, to brown evenly on all sides.
  • Once the potatoes are done, add in the seasonings, onions, and peppers. Mix well, then serve alongside your favorite breakfast foods.
