Ingredients

  • For the salad
  • 1 English cucumber, sliced lengthwise and cut into half moons

  • 1 green bell pepper, chopped into 1-inch pieces

  • 2 cups grape tomatoes, halved

  • 6 oz feta cheese, cut into cubes

  • 1/2 cup thinly sliced red onion

  • 1/4 cup pitted Kalamata Olives, halved

  • Dressing
  • 2 Tbsp red wine vinegar

  • 1/2 tsp Dijon mustard

  • 1 garlic clove, minced

  • 1 tsp dried oregano

  • 1/4 cup extra-virgin olive oil

  • salt and pepper, to taste

Directions

  • Add all of the ingredients for the salad to a large bowl.
  • To make the dressing, in a small bowl, whisk together the red wine vinegar, Dijon mustard, garlic, and oregano. While whisking continuously, slowly drizzle in the olive oil to create a smooth, emulsified dressing. Season with salt and pepper to taste.
  • Pour the dressing over the salad and toss well to evenly coat. Serve immediately.
