Fried Calamari

1 lb calamari, tubes and tentacles
2 cups buttermilk
salt, as needed
1 3/4 cups all-purpose flour
1/2 cup cornstarch
vegetable oil, for frying
2 tsp chopped fresh parsley, for garnish
sauce of your choice
Directions
- Prepare the calamari by slicing the tubes into rings and keeping the tentacles intact.
- In a bowl, combine buttermilk and 1 tbsp of salt. Add the calamari to the buttermilk mixture and refrigerate for 30 minutes.
- Meanwhile, in a large bowl, combine the all-purpose flour, cornstarch, and 1 tsp of salt.
- Take the calamari out of the fridge and shake off any excess buttermilk. Toss the calamari in the flour mixture to generously coat, then set aside in a separate bowl.
- Heat a pot of oil anywhere between 350 and 365°F.
- Fry the calamari for 4-5 minutes, until golden brown and crispy. After frying, immediately sprinkle them with a bit of salt.
- Garnish with fresh parsley and serve with the sauce of your choice.
