
Double Onion Burgers

2 lb ground beef (75% or 80% lean)
neutral oil, for cooking
salt, to taste
1 yellow onion
8 American cheese slices
8 baby dill pickles, sliced
4 sesame buns, lightly toasted
- Burger sauce
1/2 cup mayo
1/4 cup ketchup
1 tbsp dijon mustard
2 baby dill pickles, finely diced
1/2 tsp paprika
1 tsp dill pickle juice
salt and pepper to taste
Directions
- Thinly slice the yellow onion on a mandoline and set aside.
- Divide the ground beef into 8 even-sized balls, careful not to overwork the meat.
- Prepare your burger sauce by mixing the ingredients listed, and set it aside until ready to assemble.
- Heat a large cast-iron skillet over medium-high heat and add a small amount of oil.
- Add the beef balls and press firmly with a spatula or press. Season with a bit of salt, then top with a generous amount of the thinly sliced onions. Cook for about 3 minutes, then flip so the onions are on the bottom. Cook for another 2 minutes. In the last minute of cooking, place a slice of American cheese on each patty to melt. Repeat with the remaining patties.
- Lightly toast the sesame buns until golden. To assemble the burgers, start by spreading a generous layer of burger sauce on the bottom bun. Add a few dill pickle slices, then place one cheesy onion-beef patty on top. Spoon on a bit more sauce, then stack the second patty. Finish with an extra dollop of sauce on the top bun, then close the burger. Serve immediately.
