
Chicken Gyros with Honey Mustard Sauce

- Chicken Marinade
1.5 lb. boneless skinless chicken thighs
1/2 cup Greek yogurt
1 tbsp olive oil
1 tbsp salt
2 tsp lemon juice
1 tsp oregano
1 tsp paprika
1 tsp cumin
1/2 tsp coriander
1/2 tsp black pepper
- Honey Mustard Sauce
1/2 cup mayo
2 tbsp mustard
1 tbsp honey
1 tbsp minced garlic
1 tbsp olive oil
- Assembling
4 pita breads, warmed
romaine lettuce, chopped
tomato, diced
red onion, sliced
Directions
- In a large bowl, add the chicken along with the rest of the ingredients for the marinade. Store in the fridge for at least 1 hour.
- Meanwhile, prepare the honey mustard sauce by mixing all of the ingredients together in a small container. Store in the fridge until you are ready to use.
- Heat about 1 tbsp of oil in a large pan on medium-high heat.
- Add in the chicken thighs and cook for 6-8 minutes on each side. Remove and set aside.
- Slice and chop up the chicken then add back to the hot pan to finish cooking completely through, about 5 minutes.
- Assemble the gyro by adding the chicken, lettuce, tomato, and red onion to a warmed pita bread. Top with a drizzle of the honey mustard sauce and enjoy!
