Ingredients

  • oil, for cooking

  • Chicken Marinade
  • 1.5 lb. boneless skinless chicken thighs

  • 1/2 cup Greek yogurt

  • 1 tbsp olive oil

  • 1 tbsp salt

  • 2 tsp lemon juice

  • 1 tsp oregano

  • 1 tsp paprika

  • 1 tsp cumin

  • 1/2 tsp coriander

  • 1/2 tsp black pepper

  • Honey Mustard Sauce
  • 1/2 cup mayo

  • 2 tbsp mustard

  • 1 tbsp honey

  • 1 tbsp minced garlic

  • 1 tbsp olive oil

  • Assembling
  • 4 pita breads, warmed

  • romaine lettuce, chopped

  • tomato, diced

  • red onion, sliced

Directions

  • In a large bowl, add the chicken along with the rest of the ingredients for the marinade. Store in the fridge for at least 1 hour.
  • Meanwhile, prepare the honey mustard sauce by mixing all of the ingredients together in a small container. Store in the fridge until you are ready to use.
  • Heat about 1 tbsp of oil in a large pan on medium-high heat.
  • Add in the chicken thighs and cook for 6-8 minutes on each side. Remove and set aside.
  • Slice and chop up the chicken then add back to the hot pan to finish cooking completely through, about 5 minutes.
  • Assemble the gyro by adding the chicken, lettuce, tomato, and red onion to a warmed pita bread. Top with a drizzle of the honey mustard sauce and enjoy!
