
Charred Cabbage with Yogurt and Spiced Parsley Oil

1/2 cabbage, cut into quarters

- Yogurt Mixture
1 cup Greek yogurt
1/4 cup mayo
- Spiced Parsley Oil
1/3 cup extra-virgin olive oil
4 cloves garlic, minced
1/2 cup parsley leaves and stems, finely chopped
1 tsp paprika
1/2 tsp Kosher salt
1/4 tsp freshly ground black pepper
1/4 tsp cayenne pepper
Directions
- Pre-heat the oven to 350° F.
- Lightly rub the cabbage quarters with olive oil and salt.
- Heat a skillet over medium-high heat and char the cabbage for 4-5 minutes on each side.
- Transfer the cabbage to a wire rack set over a baking tray and roast in the oven at 350° F for 25 minutes.
- While the cabbage roasts, prepare the parsley oil: heat olive oil in a small saucepan over medium-high heat for about 3 minutes, until shimmering but not smoking.
- Combine the remaining ingredients- garlic, parsley, paprika, salt, black pepper, cayenne pepper- into a bowl. Carefully pour the hot oil over the mixture and let it infuse for 5 minutes.
- In a separate bowl, mix together the greek yogurt and mayo. Set aside.
- To assemble, spread a generous spoonful of the yogurt mixture onto a serving plate. Drizzle with a bit of parsley oil, then place the roasted cabbage on top. Finish with another drizzle of the infused oil and serve warm.
