1 1/2 lb skirt steak
- Carne asada marinade
1/2 cup orange juice
2 tbsp lime juice
1/4 cup oil
2 garlic cloves, roughly chopped
2 tsp salt
1 tsp paprika
1 tsp cumin
1 tsp oregano
1/2 tsp black pepper
- For Assembly
4 bolillo rolls, toasted
mayo
Oaxaca cheese, sliced
refried beans
tomato, sliced
onion, sliced
avocado, sliced
cilantro leaves
Directions
- Place the skirt steak in a large bowl. In a separate bowl, whisk together all the marinade ingredients until well combined. Pour the marinade over the steak, ensuring it’s fully coated. Cover and refrigerate for at least 2 hours.
- Preheat a griddle or cast-iron skillet over medium-high heat. Once hot, add the marinated steak and cook for 3–4 minutes per side, or until it reaches your desired level of doneness. Let the steak rest for a few minutes, then slice against the grain.
- Assemble the sandwiches- slice open the bolillo rolls. Spread a layer of mayonnaise on the bottom and top half of each roll. Add slices of Oaxaca cheese and melt them using a broiler or kitchen torch. Spread a layer of refried beans over the melted cheese. Layer on the sliced tomatoes, onions, and steak. Finish with fresh avocado slices and a sprinkle of chopped cilantro. Serve warm and enjoy!
