Ingredients

  • Tomato Mixture
  • 6 ripe Roma tomatoes, diced

  • 3-4 tbsp chopped basil

  • 1 tbsp olive oil

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • Bread
  • 1 baguette, sliced

  • 3 Tbsp olive oil

  • salt

  • 1 garlic clove

Directions

  • Heat the oven to 400°F.
  • In a large bowl, combine the ingredients for the tomato mixture and set aside.
  • Brush both sides of the baguette slices with olive oil, then lightly sprinkle with salt. Bake at 400°F for 7 minutes, then flip and cook for an additional 3 minutes.
  • Remove the toasted bread from the oven and immediately rub each slice with a cut garlic clove while still warm.
  • Add a bit of the tomato mixture over each slice of bread, then serve immediately.
