- Tomato Mixture
6 ripe Roma tomatoes, diced
3-4 tbsp chopped basil
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
- Bread
1 baguette, sliced
3 Tbsp olive oil
salt
1 garlic clove
Directions
- Heat the oven to 400°F.
- In a large bowl, combine the ingredients for the tomato mixture and set aside.
- Brush both sides of the baguette slices with olive oil, then lightly sprinkle with salt. Bake at 400°F for 7 minutes, then flip and cook for an additional 3 minutes.
- Remove the toasted bread from the oven and immediately rub each slice with a cut garlic clove while still warm.
- Add a bit of the tomato mixture over each slice of bread, then serve immediately.
