Ingredients

  • 5 oz arugula

  • 6 figs, washed and quartered

  • 4 oz goat cheese (about 1/2 cup), crumbled

  • 1/2 cup red onion, thinly sliced

  • 1 cup toasted pecans

  • Dressing
  • 2 tbsp balsamic vinegar, good quality

  • 1 garlic clove, grated

  • 1/4 tsp dried thyme

  • 1/4 cup olive oil, good quality

  • 1 tbsp maple syrup

Directions

  • In a large bowl, combine the arugula, figs, crumbled goat cheese, thinly sliced red onion, and toasted pecans. Toss gently to mix.
  • To make the dressing, in a small bowl, whisk together the balsamic vinegar, grated garlic, and dried thyme. Slowly drizzle in the olive oil while whisking vigorously to create a smooth emulsion. Once fully combined, stir in the maple syrup and give it one last whisk to incorporate.
  • Either toss the salad with the dressing right before serving or serve the dressing on the side, allowing guests to drizzle it over their individual portions.
