
Arugula Salad with Figs and Goat Cheese

5 oz arugula
6 figs, washed and quartered
4 oz goat cheese (about 1/2 cup), crumbled
1/2 cup red onion, thinly sliced
1 cup toasted pecans
- Dressing
2 tbsp balsamic vinegar, good quality
1 garlic clove, grated
1/4 tsp dried thyme
1/4 cup olive oil, good quality
1 tbsp maple syrup
Directions
- In a large bowl, combine the arugula, figs, crumbled goat cheese, thinly sliced red onion, and toasted pecans. Toss gently to mix.
- To make the dressing, in a small bowl, whisk together the balsamic vinegar, grated garlic, and dried thyme. Slowly drizzle in the olive oil while whisking vigorously to create a smooth emulsion. Once fully combined, stir in the maple syrup and give it one last whisk to incorporate.
- Either toss the salad with the dressing right before serving or serve the dressing on the side, allowing guests to drizzle it over their individual portions.
