Ingredients

  • neutral oil, for deep frying

  • 12 whole large chicken wings

  • 1 large egg, lightly beaten

  • 10-12 garlic cloves, finely chopped

  • 1 Tbsp Shaoxing wine

  • 1 Tbsp Kosher salt

  • 1 tsp sugar

  • 1 tsp white pepper

  • 1 tsp garlic powder

  • 2 tsp soy sauce

  • 1 tsp sesame oil

  • 5 Tbsp cornstarch

Directions

  • Pat the chicken wings dry with paper towels.
  • In a large bowl, combine the wings with all remaining ingredients, except the oil for frying.
  • Mix well, cover, and let marinate at room temperature for 2 hours.
  • Heat a pot of oil to 325° F.
  • Give the wings another good mix just before frying.
  • Fry for 7-8 minutes, or until the internal temperature reaches at least 165° F.
  • Transfer the wings to a wire rack set over a baking tray to drain.
  • Serve hot and enjoy!
