Ingredients

  • neutral oil

  • 2 lb ground turkey

  • 1 yellow onion, diced

  • 4 garlic cloves, minced

  • 6 oz tomato paste

  • 2, 15-oz cans kidney beans, drained and rinsed

  • 4 Roma tomatoes, diced

  • 1, 15oz can tomato sauce

  • 2 cups water

  • Spice Mix
  • 2 tbsp chili powder

  • 2 1/2 tsp salt

  • 1 tsp cumin

  • 1 tsp oregano

  • 1 tsp paprika

  • 1/2 tsp cayenne pepper

  • To Serve
  • sour cream

  • shredded cheddar cheese

  • tortilla chips

Directions

  • Heat 1-2 Tbsp of oil in a large pot over medium/high heat
  • Add the ground turkey and let it cook undisturbed until browned on the bottom. Once browned, use a spoon to break it up into crumbles. Continue cooking for about 10 minutes, then remove from the pot and set aside.
  • Add a bit more oil to the pot, then sauté the diced onion for 5–7 minutes, or until softened.
  • Next, add the minced garlic and spice mix. Let cook for about 30 seconds, stirring frequently to avoid burning the spices.
  • Add the tomato paste and cook for another 30 seconds to deepen the color.
  • Add back in the ground turkey and mix everything until well combined.
  • Stir the kidney beans and diced Roma tomatoes.
  • Finally, pour in the tomato sauce and 2 cups of water, and bring everything to a gentle simmer. Cook uncovered for 45 minutes, stirring occasionally.
  • Serve hot with your choice of toppings.
