2 lb ground turkey
1 yellow onion, diced
4 garlic cloves, minced
6 oz tomato paste
2, 15-oz cans kidney beans, drained and rinsed
4 Roma tomatoes, diced
1, 15oz can tomato sauce
2 cups water
- Spice Mix
2 tbsp chili powder
2 1/2 tsp salt
1 tsp cumin
1 tsp oregano
1 tsp paprika
1/2 tsp cayenne pepper
- To Serve

Directions
- Heat 1-2 Tbsp of oil in a large pot over medium/high heat
- Add the ground turkey and let it cook undisturbed until browned on the bottom. Once browned, use a spoon to break it up into crumbles. Continue cooking for about 10 minutes, then remove from the pot and set aside.
- Add a bit more oil to the pot, then sauté the diced onion for 5–7 minutes, or until softened.
- Next, add the minced garlic and spice mix. Let cook for about 30 seconds, stirring frequently to avoid burning the spices.
- Add the tomato paste and cook for another 30 seconds to deepen the color.
- Add back in the ground turkey and mix everything until well combined.
- Stir the kidney beans and diced Roma tomatoes.
- Finally, pour in the tomato sauce and 2 cups of water, and bring everything to a gentle simmer. Cook uncovered for 45 minutes, stirring occasionally.
- Serve hot with your choice of toppings.
