Ingredients

  • 3 cups grated zucchini (about 3 medium zucchinis)

  • 1 tbsp chopped dill

  • 4 scallions, thinly sliced

  • 1 cup crumbled feta

  • 1 1/2 tsp kosher salt

  • 1/2 tsp black pepper

  • 2 large eggs

  • 3/4 cup all-purpose flour

  • olive oil, shallow-frying

  • Tzatziki
  • 1 cup Greek yogurt

  • 2 garlic cloves, grated

  • 1/2 cup grated cucumber

  • 1 tbsp lemon juice

  • 1/2 tbsp olive oil

  • 1 tbsp chopped dill

  • 1/2 tsp salt

Directions

  • Spread out the grated zucchini on a baking tray lined with paper towels. Sprinkle with 1 tsp of salt and let sit for 30 minutes. Meanwhile, in a small bowl, mix the ingredients for the tzatziki and refrigerate until ready to serve.
  • Squeeze out the excess moisture from the zucchini, then add it to a large bowl along with the dill, scallions, feta, and 1/2 tsp each of salt and pepper. Mix well, then add in the eggs and slowly incorporate the flour. Mix everything until well combined.
  • Heat olive oil in a skillet over medium/medium-high heat.
  • Add a heaping spoonful of filling and fry until golden brown on both sides.
  • Serve with tzatziki.
