- For the salad
1 English cucumber, sliced lengthwise and cut into half moons
1 green bell pepper, chopped into 1-inch pieces
2 cups grape tomatoes, halved
6 oz feta cheese, cut into cubes
1/2 cup thinly sliced red onion
1/4 cup pitted Kalamata Olives, halved
- Dressing
2 Tbsp red wine vinegar
1/2 tsp Dijon mustard
1 garlic clove, minced
1 tsp dried oregano
1/4 cup extra-virgin olive oil
salt and pepper, to taste
Directions
- Add all of the ingredients for the salad to a large bowl.
- To make the dressing, in a small bowl, whisk together the red wine vinegar, Dijon mustard, garlic, and oregano. While whisking continuously, slowly drizzle in the olive oil to create a smooth, emulsified dressing. Season with salt and pepper to taste.
- Pour the dressing over the salad and toss well to evenly coat. Serve immediately.
