4-6 catfish filets
neutral oil, for frying
- Buttermilk Brine
1/2 cup buttermilk
2 tsp salt
1 tsp black pepper
1 tbsp hot sauce
- Fish Fry Mix
1 cup cornmeal
1/4 cup all-purpose flour
1 tsp Kosher salt
1/2 tsp cayenne pepper
1/2 tsp paprika
1/4 tsp black pepper
Directions
- Make the buttermilk brine by combining all the listed ingredients. Add in the catfish filets and marinate in the fridge for 30 minutes.
- Meanwhile, whisk together the ingredients for the fish fry mix and set aside.
- Remove the catfish from the brine, letting any excess liquid drip off. Dredge each fillet thoroughly in the fish fry mix, pressing lightly to ensure an even coating.
- Pour oil into a skillet to a depth of about 2 inches. Heat the oil to 365°F. Fry the fillets in batches for about 3–4 minutes, or until golden brown and crispy.
- Transfer to a wire rack to drain any excess oil. Serve with your choice of condiments.
