Ingredients

  • 4-6 catfish filets

  • neutral oil, for frying

  • Buttermilk Brine
  • 1/2 cup buttermilk

  • 2 tsp salt

  • 1 tsp black pepper

  • 1 tbsp hot sauce

  • Fish Fry Mix
  • 1 cup cornmeal

  • 1/4 cup all-purpose flour

  • 1 tsp Kosher salt

  • 1/2 tsp cayenne pepper

  • 1/2 tsp paprika

  • 1/4 tsp black pepper

Directions

  • Make the buttermilk brine by combining all the listed ingredients. Add in the catfish filets and marinate in the fridge for 30 minutes.
  • Meanwhile, whisk together the ingredients for the fish fry mix and set aside.
  • Remove the catfish from the brine, letting any excess liquid drip off. Dredge each fillet thoroughly in the fish fry mix, pressing lightly to ensure an even coating.
  • Pour oil into a skillet to a depth of about 2 inches. Heat the oil to 365°F. Fry the fillets in batches for about 3–4 minutes, or until golden brown and crispy.
  • Transfer to a wire rack to drain any excess oil. Serve with your choice of condiments.
