4 chicken thighs, boneless and skinless
1/4 cup flour
olive oil, as needed
2 Tbsp butter
1/2 yellow onion, diced
4 garlic cloves, minced
1/2 cup sun-dried tomatoes, julienned
1/2 cup chicken broth
1 cup heavy cream
1/4 cup parmesan cheese, freshly grated
fresh basil, for garnish
- Seasonings
1/2 tsp salt
1/2 tsp dried thyme
1/2 tsp dried oregano
1/4 tsp black pepper
Directions
- Prepare your chicken thighs by lightly tossing them in the flour.
- Heat a large pan on medium/high heat. Add olive oil and sear the flour-coated chicken thighs for 4-5 minutes on each side, or until browned. Remove then set aside.
- Lower the heat to medium, add the butter to the pan, and let it melt. Add the onion and cook for 5-6 minutes. Add the garlic cloves and cook until fragrant.
- Add the sundried tomatoes and the seasonings and stir. Add the chicken broth and scrape up any fond left on the bottom of the pan. Once the chicken stock is simmering, add the heavy cream and parmesan cheese and bring to a simmer.
- Add back in the chicken thighs. cook for 7-8 minutes on a medium/low heat.
- Garnish with fresh basil, then serve.
