Ingredients

  • 2 lbs cream cheese, room temperature

  • 1 1/4 cups white sugar

  • 4 whole eggs

  • 1 1/2 cups heavy cream

  • 2 Tbsp flour

  • 1/2 tsp salt

Directions

  • Preheat your oven to 400°F .
  • Lightly spray a 9-inch springform pan with cooking spray. Line the bottom and sides with two layers of parchment paper for easy removal after baking.
  • In a large mixing bowl, beat the cream cheese and sugar together with a hand mixer on medium-low speed until smooth and creamy. Add the eggs, one at a time, mixing on low speed after each addition.
  • Slowly pour in the heavy cream and mix until smooth. Once smooth, sift in the flour and salt and fold to combine.
  • Pour the mixture into the prepared springform pan. Gently tap the pan on the counter to release any air bubbles and level the mixture.
  • Bake at 400°F for about 1 hour, or until the surface is deep brown. Once baked, let the cheesecake cool at room temperature for 1 hour. Then, cover it with plastic wrap and refrigerate for at least 4 hours to fully set.
  • When ready to serve, carefully remove the cheesecake from the springform pan. Allow it to sit at room temperature for 30 minutes before slicing and enjoying.
