2 lbs cream cheese, room temperature
1 1/4 cups white sugar
4 whole eggs
1 1/2 cups heavy cream
2 Tbsp flour
1/2 tsp salt
Directions
- Preheat your oven to 400°F .
- Lightly spray a 9-inch springform pan with cooking spray. Line the bottom and sides with two layers of parchment paper for easy removal after baking.
- In a large mixing bowl, beat the cream cheese and sugar together with a hand mixer on medium-low speed until smooth and creamy. Add the eggs, one at a time, mixing on low speed after each addition.
- Slowly pour in the heavy cream and mix until smooth. Once smooth, sift in the flour and salt and fold to combine.
- Pour the mixture into the prepared springform pan. Gently tap the pan on the counter to release any air bubbles and level the mixture.
- Bake at 400°F for about 1 hour, or until the surface is deep brown. Once baked, let the cheesecake cool at room temperature for 1 hour. Then, cover it with plastic wrap and refrigerate for at least 4 hours to fully set.
- When ready to serve, carefully remove the cheesecake from the springform pan. Allow it to sit at room temperature for 30 minutes before slicing and enjoying.
